Good fish recipe

The other night I made blackened crappie fillets. I dipped them in butter and then coated them with blackening seasoning. Put them in a no stick frying pan without any  oil on medium heat until the seasoning became dark brown. Then I made some lemon butter to drizzle over the blackened fillets. Made a side of red beans and rice. It was good stuff.   Mark

Sounds good.  I'm having perch and gills tonight.  Wish I had some blackened seasoning I would give it a try.

mmmm-m. yeah brother, sounds good! what seasoning do you use? I always get the Chef Paul Cajun sesoning but you can always make your own.

1 heaping tablespoon paprika
2 teaspoons salt
1 heaping teaspoon garlic powder
1 heaping teaspoon onion powder
1/4 to 1/2 teaspoon ground cayenne pepper
2 teaspoons black pepper
1/2 teaspoon leaf thyme
1/2 teaspoon leaf oregano

blackened yellow fin tuna steaks are my favorite. i blacken them in a cast iron pan with butter and lemon pepper. med rare.fantastic. they are exellent on the grill also. do not over cook a tuna steak you will ruin it. even if you dont like em a lil rare just cook through and remove from heat immed. and let rest a couple of mins.even for people who arent big on eating fish they maybe for you.they are like a fine filet mingon of the fish family. simple yet soooo good.

I use emerils essence a lot.  I think it is a great seasoning.

I agree with you ZZIIPP 100%,
SWORDFISH IS THE SAME COOK RARE,FIRST TIME I HAD EITHER ONE,I thought I was EATING a $30 T BONE STEAK.
What turned out to be a Joke,The Law Dogs  Dont Understand!!!!
