Smoked trout recipes.....

Anybody with any good recipe's for a homemade brine for smoking trout... and...what kind of wood is best to use...

Iamdownsville
Easy brine 1 gal water
1 and1/3 cup canning salt
2/3 cup brown sugar
soak filets at least 12 hours
wood choice is up to your taste, strong go with Mesquite
mild go with Hickory or oak
lite try apple or cherry
this is what I do ,cut head and tail off fish
salt and pepper cavity and put in lemon slices
then put in a casserole dish and add 1 stick of butter and some lemon
juice then put in smoker till done,

not a big fan of eating trout but smoked works. another way i like em is to toast some almond pcs in a cast iron skillet and then add butter, throw in the trout with a lil salt and pepper. trout almondine its pretty tasty.

I have not smoked my own trout or fish since I accidentely stepped on and broke the power cord off my little cheif. 

Recently I have been taking all my meat ( fish, avian, deer meat ) to the alpine in honesdale to have smoked.  I think he charges 1.75 a pound to smoke anything and it turns out awesome.  I usually ask to have things double smoked.

For 1.75 a pound you can't even buy all your ingredients to do most home brews.
